What a beautiful day it is today! It’s Sunday morning, the sun is shining and the sky turns blue. Okay, it’s not warm outside but this is currently not hurting me, I feel spring fever arise in me and that gives me extra energy and motivation to get things going.

My day has started good already as I went out for a run. With this weather I can not sit still and what could be better than putting on your running shoes at the crack of dawn and enjoy the silence of an early and crisp weekend morning. Being one with nature, the sun on my face, birdies announcing the start of the day, the morning dew that stretches over the landscape like a velvet blanket. I love it!!

Once home I feel completely jazzed both mentally and physically and can not wait to dive into my kitchen because I’m in for something good. First of all I want to treat myself to a muffin because I believe I’ve earned that. Making your own muffins is always entertaining. The best part is that there’re countless combinations possible with endless flavors, both sweet and savory. Spring-like scenes that have unveiled while running, inspired me to prepare something that perfectly fits with a day like today: a lemon poppy seed muffin.

This lemon muffin tastes truly divine. It’s fresh by the lemons and soft on the inside by the sour cream and coconut oil that I’ve put into it. For the sweetness I used coconut blossom sugar instead of refined sugar. I’m not saying this is a ‘healthy sugar, but rather a ‘less bad sugar’. It’s true that this kind of sugar retains more nutrients, that’s because the nectar is not heated after being tapped from the flower of the coconut tree. As a result, all minerals, including magnesium, iron, zinc, potassium, and a number of B-vitamins remain stored. In my view, that’s the only ‘healthy’ thing with regard to this kind of sugar, sugar remains sugar as it is, nothing more and nothing less. The poppy seeds on their turn, add a slight nutty flavor and they have the pleasant side effect that causes the muffin is even softer on the inside than it already is.

As I’m writing this blog, I’m enjoying my muffin while staring through the window, with a great sense of satisfaction and fulfillment. The sun is still shining, the sky is still heavenly blue. The world around me is waking up again gently from its Sunday sleep and goes back to the order of the day. A particularly beautiful day, that is!

Recipe Lemon Puppy Seed Muffin

Cook Time: 20 minutes

Total Time: 35 minutes

Recipe Lemon Puppy Seed Muffin


  • 150 gr flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 2 tsp poppyseed
  • 55 gr coconut blossom sugar (or granulated sugar)
  • 1 egg
  • 100 gr sour cream
  • 80 ml coconut oil
  • 60 ml lemon juice
  • zest of 1 lemon


  1. Preheat your oven to 175°C or 350°F (no fan !!).
  2. Line a muffin pan with muffin wrappers.
  3. Combine flour, salt, baking powder, bakingsoda, poppy seeds and sugar in a bowl.
  4. Melt coconut oil and measure 80 ml.
  5. Beat egg in a separate bowl.
  6. Add sour cream, lemon juice, lemon zest and coconut oil and beat well until combined.
  7. Little by little add flour mixture and beat till smooth.
  8. Use a big ice scoop to fill the wrappers, 1 scoop per wrapper.
  9. Bake for 20 minutes or until a tooth pick comes out clean.
