Kale Soup

 

Fancy a healthy vegetarian soup as main course? Maybe I can persuade you to prepare kale soup given by this easy and delicious recipe.

I guess it’s unnecessary to mention that nowadays, Kale is considered as a so-called ‘superfood’. It is packed with vitamins and minerals and you can prepare all kinds of things with it, apart from the ancient stew that we prepare with it overhere in the Netherlands (just google ‘boerenkoolstamppot’ and you’ll be amazed what kind of food some of the Dutch eat).

Did you know that soup is a great energizer? You’re probably familiar with; feeling yourself a kind of powerless and after eating a soup you hexilarate in no time and you can move forward again. Soup also has a high water content so you can keep the sense of I’m-completely-full longer and thus will have considerably less desire for a snack or whatever. Moreover, a scientific research has shown that a person consumes the least calories on days when he or she eats soup instead of the same ingredients in solid form.

In case preparing soup yourself scares you off, let me assure you that making soup at home is much more easier (and healthier) than you might think. So, my suggestion is therefor, take all your hidden vegetables and favorite ingredients out and curl up a good soup. Kale soup for example.

 

Recipe Kale Soup

Prep Time: 15 minutes

Cook Time: 15 minutes

Total Time: 30 minutes

Yield: 4 persons

Recipe Kale Soup

Ingredients:

  • 250 gr kale
  • 300 gr potatoes
  • 1 onion
  • 1 clove of garlic (or quantity to choice)
  • ½ cup diced carrots
  • ½ cup of celery
  • 1 big leek (only the white part)
  • 4 cups of vegetable stock
  • salt and pepper to taste
  • olive oil to fry
  • 1 tsp wasabi (optional)
  • pumpkinseeds to garnish (optional)

Directions:

  1. Dice the potatoes, carrot, onion and garlic and slice the celery and leek.
  2. Chop the kale roughly.
  3. Glace the onion in some olive oil i a large stock pot
  4. Add the garlic.
  5. Add the carrot and potatoes and stir for 3 minutes.
  6. Add the other vegatables together with the vegetable stock and let it cook for 15 minutes.
  7. Blend the soup with a blender or food processor.
  8. Add salt and pepper to taste and the wasabi (optional).
  9. Garnish with pumpkinseeds (optional).
