Have you ever thought of making mayonnaise yourself? This is so quickly made and so delicious, in a way you will not buy it in your supermarket anymore and if properly stored in the fridge in an airtight manner, it will last for a couple of weeks.

The nice thing about homemade mayonnaise is the many variations you can make of it. For a more spicy one you can for instance add chives. To get a nice aiolie you just add crushed cloves of garlic and for a sweeter (less healthy) version, add a teaspoon of agave syrup or powdered sugar (all to taste of course).

Tip! If you’re afraid your mayonnaise will separate, just add a drup of boiling water to it before you start adding the oil.


Recipe Homemade Mayonnaise

Prep Time: 15 minutes

Yield: 250 ml

Recipe Homemade Mayonnaise


    Basic Recipe
  • 1 egg yolk
  • 1 tbsp dijon mustard
  • 1 tsp white wine vinegar
  • juice of half a lime
  • 150 ml vegetable oil (grapeseed oil or sunflower oil).
  • salt and/or pepper to taste


  1. Whisk egg yolk, vinegar, lime juice and mustard in a CLEAN bowl (with whisk or blender on full speed).
  2. Add salt and/or pepper to taste.
  3. Add oil drop by drop by whisking (IMPORTANT! This must be done drop by drop otherwise the mixture will separate).
  4. Whisk firmly untill mayonnaise is creamy and full of flavour.
  5. If neccessary add salt and/or pepper to taste.
