Healthy Cookies

Making cookies is totally my thing and now and then I commit myself to making a healthy version (obviously the saying ‘all work and no play makes Jack a dull boy’ is in its place here).

This vegan and gluten-free (no less) cookie is packed with oatmeal as main ingredient and doesn’t contain refined sugar.

Super for breakfast or as a snack.

Cook Time: 15 minutes

Total Time: 25 minutes

Yield: 24 (muffin pan) or 36 (baking sheet)

Recipe Healthy Cookies


  • 250 gr rolled oats
  • 120 gr palm sugar
  • 2 tbsp flax seeds
  • ¾ tsp cinnamon powder
  • ½ tsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp salt
  • 60 ml coconut oil
  • 60 ml yogurt (low fat)
  • 2 tbsp maple syrup
  • 1½ tsp vanilla extract (see recipe)
  • 2 tbsp dried cranberries
  • 50 gr chopped mixed nuts (unsalted)


  1. Preheat oven on 180°C.
  2. Grease a muffin pan with some oil (not necessary in case you use silicone muffin pan) or line a baking sheet with parchment paper.
  3. Grind 100 gr rolled oats, palm sugar and flax seeds in a food processor or spice grinder until powdered and transfer to a mixing bowl.
  4. Add cinnamon powder, baking powder, baking soda and salt and stir well until combined.
  5. Add coconut oil, yogurt, maple syrup and vanilla extract and whisk until combined .
  6. Add the remaining rolled oats, dried cranberries and chopped mixed nuts (it will become a crunchy mixture now).
  7. Poor in 2 tablespoons of mixture in each cup of the muffin pan, press it a little bit with your (greaseless) fingers or put 1 tablespoon on your baking sheet (with little space in between as they will not spread much).
  8. Bake for 15-20 minutes (or approx. 12 minutes when you're using a baking sheet).
  9. Cool for 10-15 minutes in muffin pan or on baking sheet before serving,
