Frosted Oatmeal Cookie

After our unexpected return from Paris I actually had little enthusiasm and inspiration to dive into the kitchen again and go prepare something. Well, we ran out of cookies and my husband and I are used to eat a cookie with our tea every evening, in fact, we really can not do without it. To leave the haunting experiences of our (unfortunately too short) visit to Paris somewhat behind, I forced myself to go into my kichten anyway and went to work.

I prepared a spicy cookie with cinnamon and nutmeg that I have incorporated in it and oatmeal as the base ingredient. I also glazed it with a layer of shiny crispy sugar. This purely to spoil my husband and myself a little after what we had experienced the day before in Paris.

I admit, in appearance it is not one of my best pieces of art but who cares, at least we can still enjoy which some of us unfortunately can not….

 

Recipe Glazed Oatmeal Cookie

Prep Time: 20 minutes

Cook Time: 10 minutes

Total Time: 30 minutes

Recipe Glazed Oatmeal Cookie

Ingredients:

    Flour mixture
  • 100 gr oatmeal
  • 150 gr flour
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • ½ tsp baking powder
  • ½ tsp salt
  • ¼ tsp nutmeg
  • Butter/Sugar Mixture
  • 125 gr soft butter
  • 125 gr lightly packed light brown sugar
  • 55 gr granulated sugar
  • 1 egg
  • ½ tsp vanilla extract (SEE RECIPE)
  • Icing
  • 100 gr icing sugar
  • 1 tbsp hot water
  • 1 tbsp milk

Directions:

  1. Preheat the oven to 175°C.
  2. Line a baking sheet with parchment paper.
  3. Mix all ingediënten of the flour mixture into a bowl and set aside.
  4. Beat the butter lightly with your mixer in a separate bowl.
  5. Add all the sugar, egg and vanilla extract and mix until everything is well incorporated.
  6. Mix with the mixer on low speed the flour mixture into the butter/sugar mixture until well combined.
  7. Turn the batter into balls, place them on the baking sheet and gently press them flat.
  8. Bake for 10-12 minutes until they are golden brown and leave to cool on the baking sheet.
  9. Meanwhile, prepare the ICING by stirring all ingredients together in a bowl.
  10. Grease the cookies with the icing and allow to cool further in the fridge and to harden the frosting.
