Cauliflower Quinoa Salad

Cauliflower Quinoa SaladI had a big hit with this salad, very healthy and so easy to make. It contains a lot of roasted veggies like cauliflower, red cabbage, stalks of cellery, sugarsnaps and arugula. I added some mint, cooked quinoa, raisins and roasted almonds. All together tossed with some good olive oil and lemon juice.

My kind of dinner…. delicious


Recipe Cauliflower Quinoa Salad

Recipe Cauliflower Quinoa Salad


  • 125 gr chopped red cabage
  • 1 small cauliflower
  • 75 gr quinoa
  • 2 firm hands arugula
  • 1 firm hand chopped mint
  • 2 chopped celery stalks
  • 125 gr sugar snaps
  • 1 small hand raisins
  • 75 gr roasted almonds
  • Dressing
  • 6 tbsp olive oil
  • juice of 1 lemon


  1. Cut de cauliflower in little rosettes and bake together with red cabage approx 20-25 minutes in the oven at 200°C. After that let it all cool.
  2. Cook the quinoa according instructions and let it cool.
  3. Blanche the sugar snaps for 2 minutes and let them cool.
  4. Transfer all salad ingredients to a bowl and sprinkle with olive oil and lemon juice.
