Caesar Pasta Salad

The popularity of this salad around the world is due to a man that bears the salad’s name, Caesar Cardini (not Julius Caesar as many people believe). This is the most favourite summersalad from my husband and me. We are completely addicted to it and in summer we eat it once a week (we’re even thinking of eating it in the coming winter, with the heater on 30°C of course). To make it more a main dish salad I added a little bit pasta to it. Sometimes other ingredients are added such as chicken or bacon, but I skipped that.

 
 

Recipe Caesar Pasta Salad

Recipe Caesar Pasta Salad

Ingredients:

    Salad
  • 500 gr romaine lettuce
  • 75 gr wholewheat pasta penne
  • 100 gr sliced parmesan cheese
  • 100 gr homemade croutons
  • Homemade croutons
  • 100 gr diced old bread
  • 60 ml olive oil
  • 2 cloves of minced garlic
  • 1 tbsp dried Italian herbs
  • Dressing
  • 1 lime
  • 1 ½ tbsp dijon mustard
  • 30 gr anchovies (without oil)
  • 3 cloves of minced garlic
  • 200 ml olive oil
  • pepper to taste (salt is not necessary because anchovies it salt enough by itself)

Directions:

    Salad
  1. Preheat oven to 180°C.
  2. Cook the pasta according to the instructions.
  3. Meanwhile dice bread approx. 1 cm.
  4. Add half of the oil (30 ml) to a baking dish.
  5. Transfer the diced bread to your baking dish, add minced garlic, Italian herbs and rest of the olive oil (30 ml) and shuffle all together by hand.
  6. Bake for approx. 15 min until crunchy and golden brown. Set aside to cool.
  7. Drain pasta and give it a good splash with cold water until it's cooled down and set aside.
  8. Chop lettuce roughly and transfer to a big bowl.
  9. Add sliced parmesan cheese, cooled pasta and cooled croutons.
  10. Dressing
  11. Drain anchovies.
  12. Squeeze lemon in a separate bowl.
  13. Add mustard and minced garlic.
  14. Mince anchovies and transfer to the bowl.
  15. Mix al together well with a guard.
  16. Add very slowly and carefully (otherwise it will sift) the olive oil and keep mixing with a guard until smooth.
  17. Add pepper to taste.
  18. Pour out the dressing to the salad and mix well.
