Blueberry Lemon Cookies

Whenever a new homemade recipe turns out to be a success I always have a little dance of joy in my kitchen.

I few days ago I went to the street market to buy fresh fruit and couldn’t resist buying these blueberries. The cook inside me immediately said I had to use these in some kind of cake because of their softness and rich flavour. Once I began to work on a recipe I came up with this and when they came out of the oven and after tasting them, I couldn’t hold my legs still, I had to dance, nothing I could do about that.

Don’t expect a crunchy cookie, just enjoy the smooth melting cake with blueberry flavour and a touch of  lemon in your mouth. It will make you dance, that I can assure you….


Recipe Blueberry Lemon Cookies

Prep Time: 25 minutes

Cook Time: 15 minutes

Total Time: 40 minutes

Yield: approx. 24 cookies

Recipe Blueberry Lemon Cookies


  • 200 gr all-purpose flour
  • 25 gr cornstach
  • ½ tsp baking soda
  • ½ tsp baking powder
  • ⅛ tsp salt
  • 50 gr lightly packed white sugar
  • 50 gr regular white sugar
  • 125 gr butter
  • 1 egg
  • 1 egg yolk
  • 150 gr blueberries
  • juice of half a lemon
  • zest of 1 lemon


  1. Preheat oven at 170°C.
  2. In a bowl mix flour, cornstach, salt, baking powder and baking soda.
  3. In a separate bowl cream butter and sugar.
  4. Add egg and egg yolk.
  5. Add lemon juice and zest.
  6. Stir this in the flourmixture with your spatula.
  7. Stir in the blueberries.
  8. Scoop your cookiedough on a wide parchment paper lined baking sheet.
  9. Bake for approx.15 minutes until slightly brown.
