Amaretti Cookies

This crunchy Italian cookie is made from almond flour and has a nice soft core. Usually they are served as balls to obtain a soft core but I have flattened them a little, making them widely crunchy and thus get a nice bite.

Total Time: 1 hour, 20 minutes

Recipe Amaretti Cookies


  • 200 gr almond flour (or grinted ground almonds)
  • 200 gr granulated sugar
  • 2 big egg whites (approx 60 gr)
  • 2 tbsp all purpose flour
  • 1/2 tsp almond extract
  • pinch of salt
  • powdered sugar


  1. Peheat oven to 160°C.
  2. In a large bowl, sift together almond flour, sugar and flour.
  3. In a separte bowl whisk egg whites with a pinch of salt until soft peaks.
  4. Whisk in almond extract.
  5. Add this mixture to bowl with flour/sugar mixture and stir until it comes together, kneading with your hands if necessary until it forms a sticky dough.
  6. Lightly dust your hands with powdered sugar.
  7. Grab some pieces of dough with a cookie scoop or odinary spoon and roll into little balls of approx. 1".
  8. Roll balls into powdered sugar.
  9. Arrange balls on parchment baking sheet(s), leaving approx. 1" between cookies and flatten them somewhat.
  10. Let cookies dry for approx. 15-20 minutes.
  11. Bake the cookies for approx. 20-25 minutes until top is cracked and bottom is just bearly golden.
  12. Let cool for 2-3 minutes on baking sheet(s) and then transfer to a wire rack to cool completely.
